Garlic Chicken Pizza
Is there anyone that doesn’t love pizza? It’s got everything for a balanced meal, all in one slice. You’ve got your meat, dairy, vegetables and bread in every delicious bite. If I ever developed a gluten allergy, pizza would be the thing I’d miss the most. Sure, there are lots of gluten free pizza doughs you can find, but they just aren’t the same.

Who remembers the Food Pyramid?
When I was in school, we were taught to have a balanced diet, including all four major food groups. Today there are so many different diets like Atkins, Keto, vegan, gluten-free, dairy free, etc. Obviously everyone has different needs and it’s always best to consult your doctor before making any dietary changes, but I still stand by my friend the Food Pyramid. It’s all about balance. I try to eat from the four major food groups with every meal. Try being the operative word here.
While pizza isn’t considered a “health” food, this Garlic Chicken Pizza is loaded with good ingredients, so you don’t have to feel guilty eating it. Pair it with a tossed green salad it’s the perfect meal.
Cooking at home allows you to control the quality of the ingredients and you can watch the levels of fat and sodium and preservatives. Homemade pizza is also a fun thing to make with the entire family. Sometimes we’ll have make your own pizza nights and I’ll lay out a bunch of different toppings and everyone can make their own, individual pizzas. Little pizzas are so fun for a slumber party as well. Throw in a make your own sundae bar for dessert and you’re sure to be a popular party host.

Making homemade pizza dough isn’t complicated, but I found some prepared pizza crust at Trader Joe’s that is absolutely delicious. It’s organic and doesn’t even have to be thawed.
One of the things on my wish list is a pizza oven so that we can make wood fired pizza crust at home. Since Santa hasn’t delivered one to me yet, this pizza crust does the trick for a delicious wood-fired taste out of my traditional oven. Simply bake directly on your oven rack, or place on a round pizza pan and bake for 10-12 minutes. The outside edges get nice and crisp, while the inside is light and airy. Trader Joe’s can do no wrong!
Rather than using a traditional marinara sauce, this Garlic Chicken Pizza has garlic olive oil as the “sauce.” Our local Olive Tap has all different flavors of infused olive oil and the Roasted Garlic Olive Oil has so many different uses. Preparing your own garlic infused olive oil is super easy if you don’t have a bottle on hand. Here’s a little tutorial for you:

Other than baking the pizza in the oven, the only cooking required is to sauté some yellow onions in a little bit of EVOO, topped with some S&P.
Take a little help from the store and buy a Roasted Chicken. Just pull the skin off and shred it by hand.
This Garlic Chicken Recipe makes two pizzas. Assembly is super simple.
- Place the pizza crusts out on the kitchen surface
- Using a pastry brush, spread garlic oil all over the surface of the crust
- Sprinkle with shredded Mozzarella cheese
- Add Italian seasoning (evenly distributed across the entire crust)
- Cover with shredded roasted chicken
- Top with caramelized onions
- Add sun-dried tomatoes, chopped into small pieces
- Bake in the oven for 10-12 minutes at 420 degrees
- Cool for 5 minutes
- Finish off with some fresh chopped basil
- Devour
Italian seasoning is optional, but it adds an additional layer of flavor and I like to include it when I make this recipe. Crushed red pepper flakes can also be added if you prefer a little bit of heat.
Look at that golden crust and bright, green fresh basil. Fresh herbs are a staple in my refrigerator and basil is my favorite.
Note: Feta cheese or goat cheese would be equally as delicious as Mozarella.

Ingredients
- This is one of those recipes where I don't really measure the ingredients, so these are just some guidelines. If you like lots of cheese, add more cheese! If you prefer more oil, smother the crust with as much as you please.
- 2 prepared pizza crusts
- 1/2 large yellow onion, finely chopped
- 1 tablespoon olive oil
- Salt & pepper to taste
- 4 tablespoons garlic infused olive oil
- 1 Roasted chicken
- 2 tsp Italian seasoning blend
- 8 Sun-dried tomatoes packed in water, drained and finely sliced
- 1 1/2 cups shredded mozarella cheese
- 8 basil leaves, finely chopped
Instructions
- Preheat oven to 420 degrees, if using the Monteli pizza crusts. If not, then follow cooking directions on the package of the crust you're using.
- Add the olive oil, onions, salt & pepper to a medium-sized sauté pan and cook until the onions have softened.
- Spread 2 tablespoons of the garlic infused olive oil on each crust using a pastry brush.
- Spread half the cheese on each crust.
- Sprinkle 1 tsp of Italian seasoning over each crust.
- Add shredded roasted chicken, half the sun-dried tomatoes and half of the onions to each crust.
- Bake either directly on the oven rack or on a pizza pan for 10-12 minutes, or until the crust is golden brown.
- Let cool for 5 minutes and top each pizza with half the chopped fresh basil.
- Serve with a tossed green salad and enjoy!
