Buffalo Chicken Sandwich
Hello Foodies! It’s football season and that means lots and lots of wings. Whenever I make wings, I like to make them in my Instant Pot. They cook up quickly and cleanup is super easy. Wings are always a treat, but sometimes I like to enjoy the flavor of wings in a sandwich. This Buffalo Chicken sandwich is super easy and you can adjust the heat level to your liking. I would love to say it’s not as messy as wings, but that would be a lie. It’s messy and worth every drip!
We are big football watchers in our house. My husband is a huge college football fan. He played football for the Kansas City Wildcats (under current coach Bill Snyder) and has been a devout fan ever since. The first college game of the season is practically a holiday around here. I’m given strict instructions not to make any plans that day! As for me, I prefer to watch NFL games. Living so close to Denver, we are in Broncos country. On game days, everyone is out in their Broncos gear at the grocery store, restaurants, out walking the dog, you name it. Even the local restaurants offer specials when the Broncos win. One of my favorite things about fall is definitely football.
While we love to go and watch football at a sports bar with friends, our preference is to watch the games at home. It’s not as loud and we have a perfect view of the TV screen. This Buffalo Chicken Sandwich is the perfect dish to enjoy while watching a game in the comfort of our own home.

You can use grilled chicken breasts for this sandwich, but I prefer shredded chicken. Just place some frozen chicken breasts in the Crock Pot with some chicken stock or broth and cook on low until fully cooked. The chicken will shred easily with two forks and the meat will be incredibly tender and juicy. Make extra to enjoy in Chicken Enchilada Casserole, tacos, tostadas or enchiladas.
The buffalo sauce can be as hot or mild as you like it. Frank’s Red Hot Sauce is the perfect hot sauce for wings or for this Buffalo Chicken Sandwich. It packs a lot of heat, but you can control the heat level using other ingredients.
If you like really spicy food, there is no need to use other ingredients. However, my family is a little on the wimpy side when it comes to spicy foods, so I add some butter, honey, garlic powder and worcestershire sauce to cool it down a little. The buffalo flavor is still the star, but the heat level is lower.
To make the buffalo chicken, simply add all of the sauce ingredients to a small pan until warmed and then add the shredded chicken and stir until all of the chicken is coated in the sauce.
The rolls for the sandwich are key, in my opinion. A hearty roll is required to hold up to the juicy buffalo chicken. Pretzel rolls are the perfect choice for this Buffalo Chicken sandwich. I’m really glad I left the sell by sticker on the package before taking the photograph. Very classy!
I found these pretzel rolls at my regular grocery store. They come pre-sliced and I like my rolls toasted, so I just toast them up in my toaster oven.
Bleu cheese is the popular choice when it comes to buffalo chicken wings, so that would be the obvious dressing for these Buffalo Chicken Sandwiches, but we aren’t big bleu cheese fans in our house. Instead, we opt for Ranch Dip. I prefer Ranch Dip to Ranch Dressing for this sandwich, because it helps cool down the heat and it’s not as messy. The buffalo sauce is messy enough on its own. Make an easy Ranch Dip with Ranch Dip Mix and sour cream.
A slice of Swiss cheese and some shredded cabbage round out the sandwich for a delicious game day lunch or dinner.
Serve with carrots and celery with leftover Ranch Dip. These sandwiches are messy, but no messier than wings and they are great for entertaining. Serve on mini pretzel buns for some fun sliders.

Ingredients
- 2 Boneless, skinless chicken breasts, frozen
- 32 ounces chicken stock (or chicken broth)
- 1/4 cup unsalted butter
- 1/3 cup Frank's Red Hot Sauce
- 2 tablespoons honey
- 1 tablespoon Worcestershire sauce
- 1 tsp garlic powder
- 4 Pretzel buns
- Ranch Dip (1 packet of Ranch Dip Mix, combined with 16 oz sour cream)
- 4 slices Swiss Cheese
- Shredded cabbage
Instructions
- Place the chicken breasts and chicken stock in a crockpot and cook on low until fully cooked (about 4 hours.) Remove the chicken from the crock post and shred, using two forks.
- In a shallow sauce pan on medium heat, melt the butter, then add the hot sauce, honey, garlic powder and Worcestershire sauce. Stir until well combined and heated through.
- Add the shredded chicken and stir until the chicken is all coated with the sauce.
- Toast the pretzel buns and coat both the top and bottom halves with Ranch Dip Mix. Add 1/4 of the shredded chicken to the bottom bun, followed by 1 slice of Swiss cheese and about a handful of shredded cabbage. Top with the other half of the bun and serve warm with celery and carrot slices and leftover Ranch Dip Mix.
- Note: Substitute Bleu Cheese dressing if preferred and eliminate the honey for hotter buffalo sauce. Serve on mini pretzel buns to make sliders.

I think all sandwiches taste better on a pretzel roll! Something about that chewy texture is just soooo good. I am NOT a sports fan of any kind…..which makes me an oddball in my family. My husband and “kids” live and breathe sports! Recipes I can hand them to eat in front of a game (without it ending up all over the couch) are always a big plus!
Lol! I’m glad my husband isn’t into every sport but we do have a lot of sports on the TV around here. That’s one of the reasons I love my office so much. I can sneak away and be alone when I need to.
