BBQ Chicken Flatbread Pizza
Hello friends, and happy Sunday. I don’t know about you, but I’m feeling a little unsettled by how quickly this year is already flying by. It feels like we were just making preparations for Christmas, and it’s now January 28th. I’m not going to lie, it’s been a bit of a challenging month, but I’m staying positive that this is going to be a good year.
I’m excited to share a super delicious, super simple recipe with you today for BBQ Chicken Flatbread Pizza. We love making pizza at home and having a family night of either watching a movie or playing games. Making pizza crust from scratch isn’t complicated, but sometimes it’s nice to take a shortcut and making flatbread pizzas is so quick and easy.

I take a lot of help from the grocery store in this recipe by using ready made flatbreads, bottled BBQ sauce and a roasted chicken.
I also use some fresh ingredients, like smoked gouda cheese, a red onion and fresh cilantro. You can certainly use homemade BBQ sauce and chicken breast that you prepare yourself, but sometimes prepared ingredients come in handy. There are so many great ways to use a roasted chicken like tostadas, salads, quesadillas. pizza, tacos…the list is endless!
Saute a thinly sliced red onion in some olive oil in a sauté pan on the stovetop. Cook it to your own desired doneness. My preference is when it starts to caramelize and get a little bit of brown bits on the edges.
When the onions are ready, add the shredded chicken and a few tablespoons of BBQ sauce and cook just until combined. Without this step, the chicken doesn’t absorb the flavor of the BBQ sauce. You can certainly skip this step if you like, but it only takes an extra minute or two and the payoff is worth it.
Now it’s time to assemble the BBQ Chicken Flatbread Pizzas and they could not be easier!
Spread BBQ sauce on the flatbread in a fairly thin layer with the back of a spoon until evenly coated.
Next, add a layer of smoked gouda cheese. Don’t skimp here, buy the good stuff. We’re fortunate and have an amazing cheese case at our local grocery store, so I don’t have to go to a specialty store, but even if I did, it would be a worthwhile stop. The smoked gouda cheese is key to making this pizza something extra special.
Top with the chicken and onion mixture and bake for about 12 minutes in the oven. Top with fresh chopped cilantro and serve hot.
Trust me, you are going to want to make this at home! Cut it up into small slices and serve as an appetizer for a party or serve it as an entree on movie night. The kids can totally help out with this one. Have them shred the cheese and the chicken. Give them the bottle of BBQ sauce and let them spread it on the flatbread. Let them top the flatbread with all of the ingredients.

BBQ Chicken Flatbread Pizza
Ingredients
- 2 Tablespoons of olive oil
- 1 Medium sized red onion, thinly sliced
- Salt & pepper to taste
- 2 Stonefire Artisan Flatbreads
- Bottled BBQ Sauce (whatever type you like)
- 1 Fresh roasted chicken
- 2 Cups smoked gouda cheese, shredded (get the good stuff)
- Fresh cilantro
Instructions
- Preheat oven to 425 degrees
- In a saute pan on medium-high heat, heat the olive oil, then add the onions. Season with salt and pepper and sauté until they reach desired doneness.
- Add the shredded chicken (I like just the white meat, so that's what I use) and a couple of tablespoons of BBQ sauce to the pan with the onions and heat up for about a minute or two, just until the sauce coats the chicken and onions.
- On the flatbreads, spread a thin, even layer of BBQ sauce.
- Sprinkle a layer of the shredded smoked gouda cheese.
- Top with the chicken/onion mixture
- Bake for 12 minutes on a baking sheet.
- Remove from the oven and top with fresh cilantro.
- Serve hot.
