Rice Crispy Treats w/ Rolos, Chopped Pretzels and Chocolate Drizzle

I have a confession to make. I had never in my life made rice crispy treats until I made these Rice Crispy Treats w/ Rolos, Chopped Pretzels and Chocolate Drizzle. Go big or go home, right? My mother made “regular” rice crispy treats when I was growing up and I liked them, but they were never my favorite treat. I’ve always preferred ice cream to just about any other dessert. Cake never sent me to the moon. I like cookies and apple and strawberry and chocolate cream pie, but rice crispy treats never made the list of favorites.

Then, one day I had this crazy idea to add chopped up pretzel pieces and Rolos to the rice cereal and I became a convert. I enjoy the salty/sweet combination and when you add chocolate to just about anything, it’s a major win. One of the great things about rice crispy treats are the ingredients are so affordable.

I pretty much followed the recipe on the side of the box, except I omitted a half cup of cereal since I was adding the extra ingredients. I didn’t want to run low on the marshmallow mixture. As usual when I’m in the kitchen, I winged it. You can’t wing it when you’re baking (which is why I’m better at cooking than baking.) But, I wing it a lot when I’m cooking. That’s half the fun!

Start by simmering the butter and marshmallows on low until the ingredients are all almost completely melted.

Next, take the pan off the heat and add a teaspoon of vanilla extract.

Then working quickly, mix the vanilla in and then add then add the marshmallow mixture to the cereal. Stir in the pretzels and candy and spread out in a greased pan and let cool. Then do something very wicked.

Chocolate Chips

Take some semi-sweet chocolate chips and melt them in a bowl in the microwave and then drizzle over the top of the treats.

They will look something like this. This is not a light dish, but it’s a wonderful treat. The saltiness of the pretzels and the caramel from the candy and the semi-sweet chocolate make a rich, sinful combination.
