Deviled Eggs with Applewood Smoked Bacon and Green Onions

    Happy New Year Foodies! I’m so excited to share the first recipe of the year with you. I made these Deviled Eggs with Applewood Smoked Bacon and Green Onions for a party we went to on NYE and got so many compliments on them! We always have a pretty mellow NYE. We typically go to the home of our good friends, who are more like family than friends and have a PJ party and play games and eat lots of yummy food. What’s a NYE party without tasty food? Any decent party includes delicious food!

    Deviled eggs are among my favorite appetizers to serve or bring to parties. I used to avoid making them because of the battle we all face of getting the egg shells off of the eggs until I finally perfected the right boiling technique and now they are a cinch to peel and I make deviled eggs a lot more often!     One of the other things I enjoy about making Deviled eggs is getting the chance to use my Grandmother’s deviled egg dish. My grandmother ended up with dementia and grandpa had Alzheimer’s so my mother and her sisters made the difficult decision to move them into an assisted living facility. Instead of having an estate sale, the family was invited to their home to take some treasures that were meaningful to us and the deviled egg dish was definitely something I wanted to keep. Grandma made the most delicious deviled eggs and I have so many fond memories of pool parties in grandma and grandpa’s backyard and grandma always made her deviled eggs and spiced pineapple. I’ll share the recipe for the pineapple with you soon as well! The dish is so special to me. Isn’t it amazing how a dish or a song or a smell can bring you back in time to a specific moment? I love that! Grandma and Grandpa both are in heaven now, but those special memories will be with me forever and I treasure them!

    In addition to the applewood smoked bacon and green onions, the key to my deviled eggs is white vinegar. My MIL taught me this little trick and you don’t need much, but a small amount of white vinegar gives the egg filling that special something. It’s not obvious, but a very subtle touch that makes all the difference.

    These deviled eggs have few ingredients, but each one is essential! (Not pictured is the eggs, of course and just some salt and pepper)

    I don’t know about you, but I buy store brand for staple items like condiments because the quality is just as good and I’m all about saving money. There are some products like balsamic vinegar and cheese that I splurge on, but for the basics, I stick to the store brand. Kroger happens to be the store brand at our local grocery store and I think their products are just as good as the name brands in most cases.

    The applewood smoked bacon I just simply sliced and sautéed in a small pan and then drained the fat. You can make the bacon while the eggs are boiling so it’s ready to go. You can use bacon bits in a pinch, but there is nothing like real bacon cooked fresh.

    After the eggs are done boiling and have cooled, slice the eggs in half and scoop out the yolks and mix all of the ingredients in a mixing bowl.

    Another trick for stuffing the eggs that gives a pretty presentation is using a piping bag, or if you don’t have a piping bag, just use a Ziploc bag and cut the tip off. This is a trick I learned years ago and it works really well.

    The “piping bag” will give you a lot more control when filling the egg whites.

    This is by far my favorite recipe for deviled eggs. The bacon gives them a nice smoky flavor and the onions and vinegar give them a little kick and I enjoy having some texture in my eggs.     1 deviled egg

    Deviled Eggs with Applewood Smoked Bacon and Green Onions

    Ingredients

    • 6 large eggs, hardboiled & shelled
    • 3 slices Applewood smoked bacon, chopped
    • 2 green onions, chopped
    • 1.5 tablespoons mayonnaise
    • 1 tsp yellow mustard
    • 1 tsp white vinegar
    • 1/4 tsp salt
    • 1/4 tsp black pepper
    • Paprika

    Instructions

  • Boil the eggs and let cool completely
  • Meanwhile, cook the bacon in a sauté pan and drain on a paper towel
  • Slice the eggs in half and scoop out the yolks and mash with a fork in a mixing bowl. Add remaining ingredients and stir until combined.
  • Using a piping bag, add the filling into the egg whites and sprinkle with Paprika
  • Serve cold
