Garlic bread is one of my guilty pleasures. I believe it’s genetic. My mother loves garlic bread, my grandparents all loved garlic bread, my dad loved garlic bread, my step daughters love garlic bread. Really it’s not something that can be controlled.

I have a variety of garlic bread recipes in my arsenal, but this particular variation is the most decadent and it’s no surprise it’s the richest and most fattening. I make it maybe 2-3 times a year and savor every, single bite.

It’s best to use an artisan loaf of some kind. I get a demi loaf at our local grocery store that also happens to have bits of garlic in it. It’s chewy and holds up well with the toppings. You can also use a French loaf or baguette.

I start by mixing minced garlic, mayo (I use light mayo because that’s always what I have on hand and it makes me feel better), butter and grated cheese.

Garlic Cheese Bread Mixture

Mix well, top the bread with it and broil in the oven or toast in the toaster oven. I prefer to toast it in the toaster oven because both sides get warm and golden brown, but if you prefer a softer version, throw it under the broiler. It’s rich, so I don’t put a lot on each piece of bread. Just a thin layer will do ya!

Cheesy Garlic Bread

Decadent, Cheesy Garlic Bread


Ingredients:

3 tbl salted butter, softened
1/4 cup mayo (I use the light, but you can use whatever you have on hand)
1 minced garlic clove
1/4 cup grated cheese (in this photo I used a mixed blend)
1 demi loaf of artisan bread

Directions:

Mix all ingredients for the topping in a small mixing bowl
Top the bread with the mixture
Broil in the oven or toast in a toaster oven
Serve with breath mints
