There is just something so incredibly good about Chipotle. The food is always fresh and consistently delicious. I used to always order a burrito, but then my washing machine went on the fritz and it started to shrink my clothes, so I switched to burrito bowls. My version is inspired by Chipotle, but I was not trying to replicate all of the flavors, so I put my own spin on them.

I like that these can be made at home and they are quick and easy and have lots of fresh, healthy ingredients. They are also a lot more economical than eating out, especially for a family.

The one thing I really miss by eating these rather than going to Chipotle is their cilantro-lime guacamole. I have tried recipes I’ve found online and I have yet to perfect a duplication. I love my own version, but the Chipotle version is like crack. I can’t get enough of it. Let’s get to the recipe. Start by making Ketchum Killer Marinated Chicken. You can either serve it hot or cold. I like to cut it into small, bite-sized pieces and I like to serve it warm.

Burrito Bowl Chicken

Rinse and drain some black beans and chop up some Roma tomatoes, Romaine lettuce and fresh cilantro and grate some Jack cheese, or whatever cheese you like. I like Jack in this particular dish.

I have a rice cooker and I find it so easy to quickly and easily prepare rice that way. I just pour in some water and uncooked rice, close the lid and turn it on. You can use plain white or brown rice in your burrito bowls, or kick up the flavor a little bit by adding some lime juice and lime zest to the rice. You can even do this right in the rice cooker.

Make an assembly line with all of the ingredients and let everyone in the family make their own bowls. It’s fun for kids to get involved this way, and this is also a great game day entertaining dish. Everything can be easily made in bulk and they are a lot healthier than pizza or fried chicken.

I always make some fresh guacamole. Mine is different than the one you can get at Chipotle, but it’s still delicious and creamy and serves as the dressing for these bowls so you don’t need any salad dressing.

      Salsa is a great addition! I use the guac as my “dressing” but salsa is another great alternative. Thanks for stopping by and for your suggestion.
