Who doesn’t love French fries? Seriously, they are the treat that everyone loves. Even my dog loves French fries. I know this, because Nicole told me she feeds burnt French fries to Hope. I am not ok with this, but it happened when I wasn’t home. I’d prefer not to know what happens when I’m not home. For example, I know when I travel that the family doesn’t cook at all and the beds don’t get made and fried chicken is pretty much a staple, but I’m only assuming that and don’t know it for a fact, so I can still tell myself that I’m just making assumptions. Denial can sometimes be a wonderful thing.

I’m getting off topic here. The point is, even dogs love French fries. Burnt French fries for that matter. At home I only serve baked fries. I don’t own a deep fryer and the only time I fry anything is to bread chicken for chicken parmesan. I will eat fries on a night out, and I know they are cooked in a huge vat of oil, but at home, I don’t feel it necessary to cook in tons of oil. I mainly cook with olive oil and canola oil on occasion.

My absolute favorite fries are truffle fries. If you have never had truffle fries, please accept my condolences and rectify that immediately by making these fries. They are more sophisticated than ordinary French fries and are served in the finest establishments. The hubby and I had some at the Broadmoor when we stayed there for our anniversary in December. The Broadmoor is a five star hotel in Colorado Springs. A five star hotel that serves truffle fries. Truffle fries take French fries to a whole new level.

I like to use the Handsome Cut Potato Fries from Trader Joe’s. Sometimes I take shortcuts and these fries have a natural taste to them and save me a lot of time cleaning, pealing and cutting potatoes.

Lay them out on a cookie sheet and bake them for 15 minutes so that they are defrosted and moist so that the remaining ingredients will adhere to them. In a mixing bowl, add some fresh parsley, freshly grated parmesan cheese, garlic salt and black pepper.

Take the fries out of the oven after 15 minutes and add them to the mixing bowl and drizzle with the truffle oil and stir all of the ingredients together until the fries are well coated. Return them to the baking sheet and spread them out evenly and bake them for another 15 minutes then serve. They are over the top delicious! These fries are not just good with burgers, these fries can be served with steak or chicken, or as an appetizer.

  1. I’m not sure why I never thought of making truffle fries at home – one of our favorite restaurants serves them and ordering them is pretty much a requirement when we go there. I’m looking forward to trying this!
